  1. Heat the grill or a grill pan over medium-high.
  2. Coat the watermelon slices with 1-2 tablespoons of the olive oil and grill for 2-3 minutes on each side, or until there are visible grill marks.
  3. Set the watermelon aside to cool, then slice into cubes, discarding the rind.
  4. While the watermelon is cooling, make the dressing by whisking together the remaining 1/4 cup of olive oil with the lime juice, honey, and a pinch of maldon sea salt.
  5. In a large salad bowl, add the arugula, followed by the watermelon cubes, red onion, olives, feta, and torn mint leaves.
  6. Mix in the dressing and toss to combine, then garnish with the crushed pistachios, and season with extra salt and pepper to taste.
