Salmon Skewers

Instructions

  1. Take the skin off the salmon and cut into roughly 1-inch cubes.
  2. Thread the salmon cubes onto the skewer, placing a slice of lemon in between each cube.
  3. Drizzle with olive oil and season with salt on all sides.
  4. To cook, fire up the grill or heat a grill pan over medium high.
  5. Add the salmon and let cook for 3-5 minutes before turning until pink on all sides.
  6. Place the salmon skewers on top of a salad and serve family style. This dish would go great with some brown rice or crusty sourdough bread!

Notes

If using wooden skewers for the salmon, they need to soak in water for 30 minutes before you cook them.
